Mayonnaise: What is It?

A mayo advertisement Have you heard about the court case over whether a product without eggs can be defined as mayonnaise?

The corporation filing the lawsuit — which makes everything from ice tea to petroleum jelly, and which is also a well-known mayonnaise manufacturer — argues: “We simply wish to protect both consumers from being misled and also our brand…”

So how do you define mayonnaise? Does it have any necessary or perhaps essential ingredients? Or is this not about mayo at all, making this minor turf dispute a nice e.g. to think with when mulling over how identities are not just made but policed.
