So the question to me is: If you were to write a history of chocolate production where would you start? And whose history would it be? For if we are thinking in terms of origins, here we have an example in which, at the origins of the chocolate-making process, there’s no chocolate. What’s even more important: there is, apparently, no knowledge of what chocolate even is!
A history of chocolate, therefore, is hardly a story that cocoa farmers in the Ivory Coast would tell.
